Light and fluffy, these muffins are packed with antioxidants from fresh or frozen blueberries and full of calcium from real DairyPure® milk. All the nutrients you need to start your day off right.
Spray a muffin tin with non-stick cooking spray or fill with muffin liners.
In a large mixing bowl combine flour, baking soda, cinnamon and salt.
In a separate bowl beat shortening, add sugar, and beat in eggs.
Add dry ingredients alternating with milk. Stir just enough to moisten. Pour into muffin tin. Bake at 400°F for approximately 30 minutes.
*Optional: you may roll blueberries in 1/2 cup of the flour to reduce the "bleeding" of the blueberries into the muffin.
